Simple Vegetarian Greek Salad for busy days

This vegetarian Greek salad is a delicious and healthy way to enjoy your vegetables. It is packed with nutrients and flavor, and it is easy to make. This recipe is perfect for a quick and easy lunch or dinner or for a side dish at a party.

Ingredients:

  • 1 head of romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, chopped
  • 1/4 cup red onion, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped

Dressing:

  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. In a large bowl, combine the lettuce, tomatoes, cucumber, onion, feta cheese, olives, and parsley.

2. In a separate bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper.

3. Pour the dressing over the salad and toss to coat.

4. Serve immediately.

Tips:

  • You can use any type of lettuce you like.
  • You can add or subtract any of the ingredients to your liking.
  • You can make this salad ahead of time and store it in the refrigerator.
